Solid State Fermentation
Solid State Fermentation (SSF) is one of nature’s key bioconversion processes. With SSF, the carbon cycle is continuously completed by decomposing organic matter allowing microorganisms, like fungi, to grow on a solid substrate and break it down to release nutrients and energy.
SSF is an ancient technology that for centuries has played an important role in the industrial preparation of various foods and beverages all over the world. SSF involves the careful selection of a specific strain of naturally occurring fungus that expresses the required enzyme profile and activities for a given substrate.
