The main objective of poultry production is to produce quality, wholesome meat.

Meat quality means different things to different people. Consumers want a safe, healthy and affordable product, retailers want to display attractive products, and poultry meat producers want to deliver these products efficiently and profitably. Some of the challenges producers face when considering meat quality are drip loss and oxidation. Drip loss reduces the weight of saleable product as well as eating quality. Oxidation causes degradation during storage, which affects product appearance.
